[2.0 and 2.5 beta] Why does saving (compressing audio) take so long, but only uses 5% of CPU?

So, I've got this lovely new quad core AMD Phenom running at 3.6Ghz with 4Gb RAM. Encoding on other apps is very quick. What I don't understand is, that after a few minutes, I click "stop" and it starts "compressing audio". SO SLOWLY! Sometimes LONGER to compress audio than the video I recorded.

But when I look at CPU and memory use, it's only using 5% cpu for its process. What am I doing wrong?
